Nearly a decade and a half after stepping away from crafting Cap Classique, the acclaimed Franschhoek estate, Chamonix, unveils its latest sparkling wine: the Chamonix Blanc de Blancs 2021. This bottle-fermented delight marks their return to this style since their last release in 2009. Solely derived from Chardonnay vines planted in 1988 on a southern slope at an elevation of 400 meters, this wine embodies the essence of Chamonix’s renowned Chardonnay fruit, famed for its vibrant flavors and freshness.
Neil Bruwer, the winemaker at Chamonix, aimed for a Cap Classique that harmonizes layered complexity with a textured palate while retaining the invigorating freshness characteristic of their Chardonnay grapes. “Being intimately familiar with the vineyards and the grapes’ chemistry, I anticipated bracing acidity and diverse Chardonnay flavors from our elevated mountain vineyard,” explains Neil. “To impart a refined, luxurious character, 70% of the blend fermented in aged French oak barrels, while the remainder aged in stainless steel. After resting on the lees for seven months, the secondary fermentation in the bottle spanned 18 months, drawing in myriad nuances and developing the effervescence that defines this style.”
Bruwer emphasizes that the 18-month bottle-fermentation precisely encapsulates the desired characteristics of their Cap Classique. “A shorter duration renders the wine overly exuberant, while a longer period diminishes its energy and vitality,” he notes. “Our goal with Chamonix Blanc de Blancs is to deliver a premium Cap Classique experience, showcasing the vibrant exuberance that captivates enthusiasts of this South African style.”
Stefan van Rooyen, CEO of Chamonix, highlights the decision to reintroduce their Cap Classique line. “In the past decade, the Cap Classique category has surged in popularity, resonating with consumers who appreciate its quality,” he remarks. “Given Chamonix’s esteemed Chardonnay still-wines, we felt it fitting to expand our portfolio with a Cap Classique, inviting new consumers to experience our brand through this exciting and fashionable wine style.
